This “semi-dried udon” is made using the noodle-making techniques of hand-pulled somen that have been passed down for over 400 years in Shodoshima.
High-quality wheat from Hokkaido is blended with flavorful olive fruit paste from Shodoshima, and the noodles are finished by coating them with olive oil.
