“Fushimen” refers to the end pieces of somen noodles created during the production process. Somen noodles are made by craftsmen who stretch dough over two rods to form thin, long strands. The straight parts are packaged as somen, while the thicker, rounded dough that remains on the rods is called “fushimen.”
Fushimen is known for its concentrated flavor, strong firmness, and chewy texture.
