Moromi is the mash created by fermenting steamed soybeans and roasted wheat with koji (a fermentation starter), then mixing it with salt water. It is aged for several months, during which it develops a rich aroma and deep umami flavor. This thick, flavorful mash is eventually pressed to extract soy sauce.
