Fushimen are the ends of somen noodles that hang over the rods during the stretching process. Because this part bears the most tension during production, it is known for its firm and chewy texture.

Masago-Kinosuke So-men production
Masago-Kinosuke So-men noodle production was established in 1920. It used to be a farming family but the founder, Genzo, started to produce the So-men during the agricultural off season in winter. His son, Kinosuke, changed to So-men production as their principal business. The current head is Kinosuke's son, Hiroaki, and his son, Atsushi. We aim to provide high quality noodles and maintain high customer service.
